Somewhere in the universe it was decided that today was the day I would receive gifts of homegrown citrus.
First my wonderful friend and colleague Helen brought me a huge bag of mandarins from her parents-in-law’s backyard. (I’m not sure about the plurals and apostrophe in that sentence but I’m off the clock so make of it what you will).
Then I arrived home to find a delivery of oranges and lemons from my piano student’s mother.
Ideas for 5 kilos of citrus most welcome.

Oh, what a lovely surprise. I have a sad lemon tree, but I know people with bountiful ones!!
When I have an abundance of lemons/ limes, I squeeze the juice and freeze. Some popes put into ice cube trays to use in cooking. 1 ice cube=1 tsp. (I think).
Recipes: dissolve equal parts sugar and boiling H2O, cool, add equal part lemon juice for cordial concentrate. Adjust sugar to taste, but that amount works for me. Last but not least: http://www.taste.com.au/recipes/14822/flourless+orange+cake The. Best. Cake. EVA!!!!! Even better the next day when all the syrupy topping has soaked through.

Oops. “popes” above should be “peeps”. Damn auto correct…!!
